Waffle Ice Cream Sandwich

Total Time: 15 minutes

Yield: 1 large Ice Cream Sandwich or 4 quarters or 2 halves


  • 2 Sheila Moore’s Gourmet Recipes Beet Waffles with Chocolate Chips
  • Approximately 1/2 cup of your favorite ice cream, softened
  • Option: approximately 1/4 cup melted white or regular chocolate
  • Option: approximately 1 tablespoon mini chocolate chips
  • Option: approximately 1 tablespoon sprinkles


  • To toast waffles: Set toaster on low setting. Place 1 frozen waffle in each slot. Toast for 1-2 toaster cycles or until lightly toasted.
  • To assemble: Spread softened ice cream on top of whole toasted waffle. Top with second toasted waffle.
  •  Smooth the edges of the ice cream and fill in any holes.
  •  Place in freezer to set ice cream. Once set, cut sandwich into quarters or halves.
  •  Variation: Dip one end of the sandwich into the melted white or regular chocolate. Top with decorative chocolate chips or sprinkles.
