Red Velvet Waffles with Lemon Cream Cheese Icing

Yield: 4 waffles / 2 servings


  • 4 Sheila Moore’s Gourmet Recipes Beet Waffles with Chocolate Chips
  • 4 oz cream cheese, softened
  • 2 oz butter, softened
  • 3/4 cup powdered sugar, sifted
  • 1/2 teaspoon vanilla
  • 1 teaspoon milk
  • 2 teaspoons fresh lemon zest
  • 2 tablespoons chocolate chips


  • For icing: Cream butter and cream cheese together. Slowly add powdered sugar, vanilla and milk. Beat on high for 1-2 minutes or until light and fluffy. Fold in 1 teaspoon fresh lemon zest.  Set aside.
  •  To toast waffles: Set toaster on low setting. Place 1 frozen waffle in each slot. Toast for 1-2 toaster cycles or until lightly toasted.
  •  To assemble: Arrange 2 waffles on each plate. Drizzle or spread icing on top of the waffles.  Sprinkle each plate with 1 tablespoon chocolate chips and 1/2 teaspoon lemon zest.
  •  Option: Serve with fresh berries.
