4 Sheila Moore’s Gourmet Recipes Beet Waffles with Chocolate Chips
4 oz cream cheese, softened
2 oz butter, softened
3/4 cup powdered sugar, sifted
1/2 teaspoon vanilla
1 teaspoon milk
2 teaspoons fresh lemon zest
2 tablespoons chocolate chips
Directions:
For icing: Cream butter and cream cheese together. Slowly add powdered sugar, vanilla and milk. Beat on high for 1-2 minutes or until light and fluffy. Fold in 1 teaspoon fresh lemon zest. Set aside.
To toast waffles: Set toaster on low setting. Place 1 frozen waffle in each slot. Toast for 1-2 toaster cycles or until lightly toasted.
To assemble: Arrange 2 waffles on each plate. Drizzle or spread icing on top of the waffles. Sprinkle each plate with 1 tablespoon chocolate chips and 1/2 teaspoon lemon zest.
